Most mornings, my family and I enjoy a large bowl of oatmeal for breakfast. But every once in awhile, we get a hankering for something different. Oatmeal Apple Spice Breakfast Cookies are one of my very favorite breakfast treats. If an oatmeal cookie and an apple spice muffin had a baby, this would be it. The kids love these because they feel like they are getting dessert for breakfast. But, I know that these tasty treats are incredibly healthy. They are whole grain, vegan and have no refined sugar or oil. And, they’re super easy to make and work great for a breakfast on the go!
Oatmeal Apple Spice Breakfast Cookies

Equipment
- mixing bowl and spoon
- baking tray
- silicone baking mat or parchment paper
- Oven
Ingredients
- 1 cup whole wheat pastry flour
- ½ cup coconut sugar
- 2 TB flax meal
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp salt
- 1 cup unsweetened apple sauce
- 1 tsp real vanilla extract
- 1 cup rolled oats
- 1 cup raisins
Instructions
- Preheat oven to 350°F.
- Line a baking sheet with either a silicone baking mat or parchment paper.
- In a medium size mixing bowl, mix together: whole wheat flour, coconut sugar, flax meal, baking soda, cinnamon, nutmeg and salt. Stir well. I like to use a whisk to get everything evenly mixed.
- Add applesauce and vanilla, stirring until everything is a sticky mess.
- Add the oatmeal and raisins. Stir.
- Drop by spoon-fulls onto the lined baking sheet.
- Bake at 350°F for 10-12 minutes.
- Remove from oven and let cool for 5 minutes.
- Enjoy!
