Oatmeal Apple Spice Breakfast Cookies

Most mornings, my family and I enjoy a large bowl of oatmeal for breakfast. But every once in awhile, we get a hankering for something different. Oatmeal Apple Spice Breakfast Cookies are one of my very favorite breakfast treats. If an oatmeal cookie and an apple spice muffin had a baby, this would be it. The kids love these because they feel like they are getting dessert for breakfast. But, I know that these tasty treats are incredibly healthy. They are whole grain, vegan and have no refined sugar or oil. And, they’re super easy to make and work great for a breakfast on the go!

Oatmeal Apple Spice Breakfast Cookies

Equipment

  • mixing bowl and spoon
  • baking tray
  • silicone baking mat or parchment paper
  • Oven

Ingredients
  

  • 1 cup whole wheat pastry flour
  • ½ cup coconut sugar
  • 2 TB flax meal
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 1 cup unsweetened apple sauce
  • 1 tsp real vanilla extract
  • 1 cup rolled oats
  • 1 cup raisins

Instructions
 

  • Preheat oven to 350°F.
  • Line a baking sheet with either a silicone baking mat or parchment paper.
  • In a medium size mixing bowl, mix together: whole wheat flour, coconut sugar, flax meal, baking soda, cinnamon, nutmeg and salt. Stir well. I like to use a whisk to get everything evenly mixed.
  • Add applesauce and vanilla, stirring until everything is a sticky mess.
  • Add the oatmeal and raisins. Stir.
  • Drop by spoon-fulls onto the lined baking sheet.
  • Bake at 350°F for 10-12 minutes.
  • Remove from oven and let cool for 5 minutes.
  • Enjoy!

  • If you don’t want to invest in Silicone Baking Mats, then Parchment Paper will be your best friend for this recipe. It also creates a nonstick surface and makes clean-up a snap.
