It has been cold, dreary and rainy here in southwestern Pennsylvania for days. It feels like the rain is never going to end, and I’m just about ready to start gathering all the animals and bringing them into the house two-by-two. On days like this, I just want to curl up in front of the fire with a hot bowl of soup. This Vegan Taco Soup fits the bill perfectly: it’s warm, spicy, has a veritable rainbow of cheery colors and is super healthy. And, I can make it in my Instant Pot with minimal work. There’s no down side!
Vegan Taco Soup
Equipment
- Instant Pot
- Cutting board
- Knife
- Garlic Press
Ingredients
- 2 cups chopped onions (can use a bag of frozen chopped onions to save time)
- 1 diced red pepper
- 1 diced orange pepper
- 1 stalk chopped celery
- 2 cloves crushed garlic
- 2 15-oz cans rinsed and drained black beans
- 1 16-oz package frozen corn
- 2 15-oz cans diced tomatoes
- 1 tsp chili powder
- ½ tsp cumin
- 2 TB coconut sugar
- 3 cups water
- 1 pinch salt
- cooking spray
Instructions
- Spray the inside of the Instant Pot with cooking spray. (I like to use avocado oil.) Set Instant Pot to Saute setting.
- Dice the onions (or use a bag of frozen chopped onions) and toss into the Instant Pot. Stir occasionally.
- Dice celery and peppers and toss into the Instant Pot. Stir.
- Saute for about 5-10 minutes.
- Add all other ingredients to Instant Pot and stir.
- Close lid and set to 30 minutes on High Pressure.
If by any chance you have home-canned tomatoes, those are awesome in this recipe! Just replace the 2 cans of diced tomatoes for a 1 quart jar of tomatoes. We usually have a pantry full of home-canned tomatoes, but had a bad crop last year so I’ve resorted to using store-bought cans. Both options work well.
Also, don’t be daunted by all the chopping in this recipe: it literally takes about 5-minutes. Or, you can go the even easier route and replace the fresh onions and peppers for a bag of frozen chopped onions and green peppers. The soup won’t be quite as colorful, but it will still taste delicious and save you some time.
