Healthy Chocolate Covered Strawberries

In honor of Valentine’s Day, I decided to try my hand at making one of my very favorite desserts—Chocolate Covered Strawberries. However, I decided to make mine healthy, so that I could eat as many as I wanted without feeling particularly guilty. With only 5 ingredients, they are surprisingly simple to make and have absolutely no refined sugar. And the best part is, they take less than 10 minutes to prepare, and about 10-15 minutes to chill. Honestly, the hardest part of this post was attempting to take photos of the strawberries.

This likely had something to do with the fact that I kept eating them before I could snap a photo. Plus, chocolate covered fingers and cameras are not natural companions. What can I say, when it comes to chocolate, will-power is not one of my strongest character attributes. But hey, no judgement, right?

Healthy Chocolate Covered Strawberries

Equipment

  • box grater
  • double boiler or microwave safe dish
  • plate or tray covered with parchment paper or silicone baking mat

Ingredients
  

  • 8 TB GRATED organic food grade cacao butter
  • 3 TB real maple syrup
  • 3 TB cacao powder
  • 1 tsp vanilla
  • 12 washed and dried strawberries

Instructions
 

  • Using a box grater, grate a chunk of cacao butter. (Edible cacao butter usually comes in a bag with several small chunks. A little goes a long way—one small chunk of cacao butter is usually more than enough for the entire recipe.)
  • Place 8 TB of the grated cacao butter into a double boiler and melt, stirring frequently.
  • Once the cacao butter is melted, reduce heat and add the maple syrup and vanilla to the double boiler. Stir until well combined.
  • Add the cacao powder and stir until glossy and smooth.
  • Remove the chocolate from heat.
  • Using a spoon, drizzle chocolate over the strawberries (or alternatively, dip the strawberries in chocolate). Place strawberries on a lined plate or tray and chill in fridge for 10-15 minutes until the chocolate hardens.

Notes

You can also make the chocolate in the microwave instead of a double boiler. Just melt the cacao butter before adding anything else.

I’ve experimented quite a bit with this recipe over the past few months. The key is to grate the cacao butter with a box grater before making any of the measurements. That allows it to melt very quickly so that you are not standing over the stove or peering into the microwave for minutes on end.
