Some days, making dinner holds the same level of appeal as getting a root canal without novocaine. In an ideal world, those would be the evenings when we would go out to dinner. However, we live about 20 minutes away from most restaurants.
This may not seem like much of a distance, but when factoring in the time it takes to wrangle two children into the car (Organic lollipops to anyone who pees before getting into the car! I’m not above bribery, pure and simple. Though, Hubby prefers to call it a “reward for good behavior.”), travel to and from the restaurant, the wait for a table, ordering 4 meals and then actually eating—I might as well waste two hours of my night, light a $50 bill on fire, and toss some crayons under my dining room table. It would be equivalent. So, that leaves me with plan C: making the easiest meal I can think of—Lazy Broccoli and Cheddar Wraps.
Quick, Easy and Healthy Comfort Food
Lazy Broccoli and Cheddar Wraps are perfect for nights like this. They only have 3 ingredients, taste like comfort food, are chock full of veggies, and only take 5 minutes to prep and 10 minutes to cook. Their cheesy, savory goodness appeals to all members of the family. And, they not only feed a family of 4 but also cost less than $10 total. What’s not to love?
Lazy Broccoli and Cheddar Wraps
Equipment
- food processor
- baking tray or large rectangular casserole dish
- silicone baking mat or parchment paper
- Oven
Ingredients
- 3.5 cups broccoli florets
- 1.5 cups shredded sharp cheddar cheese
- 4 large whole-grain wraps
Instructions
- Preheat oven to 350°F
- Combine broccoli florets and shredded cheddar cheese in the food processor. Pulse 3-4 times to finely chop and combine the broccoli and cheese.
- Lay out a large whole-grain wrap. Spread the broccoli and cheese mixture onto the entire wrap, leaving ½ inch on all sides. Roll the wrap, starting with the short side. (When done, you want a short wrap rather than a long skinny wrap—they are easier to manage.)
- Repeat the process with the other 3 wraps.
- Lay all 4 wraps on a baking tray or rectangular baking dish lined with a silicone baking mat or parchment paper (it makes cleanup easier).
- Bake at 350°F for 10 minutes.
- Remove from oven. Let the wraps sit for a minute, then cut each wrap in half to serve.
If you are feeling particularly zealous, feel free to chop a head of organic broccoli and grate your own cheese. Just tack on five minutes to the listed prep time. That said, on days when I don’t feel like cooking, I am NOT likely to grate my own cheese or chop ANYTHING. Instead, I grab a 10.8 oz bag of frozen broccoli florets and thaw it, and use a bag of pre-grated organic cheddar. Voila! These are called Lazy Broccoli and Cheddar Wraps for a reason!
